Like other types of vinegar, acetic acid is a key ingredient in apple cider vinegar. Apple cider vinegar also contains other substances such as lactic acid, citric acid, and malic acid, and bacteria. The acetic acid in vinegar blocks the enzymes that help digest starch, which lowers blood sugar levels after starchy meals such as pasta or bread. However, if you have diabetes or pre-diabetes, consult your doctor if you are considering using larger amounts than usual while cooking. Vinegar can interact with diabetes medications and should not be used by people with certain medical conditions.
