These homemade rolls made with lupin flour and flaxseed are the perfect fit – for breakfast, a lunchbox snack or a light dinner. They’re quick to make, and the result? Soft, fluffy, and aromatic rolls that stay fresh for days.

- Gluten- and grain-free – perfect for people with gluten intolerance and low-carb diets
- Rich in fiber and protein – thanks to lupin flour, flaxseed and eggs

🛒 Ingredients (for 6 rolls approx. 100 g each)
- 80 g lupin flour
- 60 g Bio Flax Flaxseed (ground or whole)
- 200 g cottage cheese
- 5 eggs
- 40 g olive oil
- 1 tsp baking powder
- ½ tsp Kłodawa salt
- 100 ml sparkling water
- 1 tsp seasoning: dried tomatoes with garlic and basil (or just basil)

🍴 How to prepare?
- Preheat the oven to 180°C (top and bottom heat).
- Add all ingredients to a large bowl: lupin flour, flaxseed, cottage cheese, eggs, oil, water, seasoning, salt, and baking powder.
- Blend until smooth – the mixture will be sticky, that’s normal.
- Using a silicone spatula or wet hands, form 6 rolls and place them on a baking sheet lined with parchment paper.
- Bake for about 30 minutes – until golden and springy.
- Remove and cool on a wire rack – best served slightly warm!
💡 Pro tip:
- Grind flaxseed just before use – to preserve more nutrients.
- Store rolls in an airtight container – they’ll stay fresh for 2–3 days.
- Great with veggie spread, hummus or classic cottage cheese with radishes!
